Cashew yogurt: 1/3 cup roasted unsalted cashews chopped, 3/4 cup greek yogurt, 2 tbsp shredded fresh mint leaves, 1 tbsp lime juice. Simply whisk ingredient together in a small bowl. Season to taste.
Lime-Cumin Vinaigrette: 1/3 cup Amazonian Nutriblend™, 1 clove garlic, grated zest of 2 lime, 2 tbsp lemon juice, 2 tbsp diced shallot, 1/2 jalapeno chile minced, 1/2 tsp cumin seeds, 1/2 tsp coriander seeds, 1/2 tsp dijon mustard. Press the garlic and put it in a bowl with the lime zest, juice, shallots and chile. Toast the cumin and coriander seeds in a skillet, let cool in a plate. Grind them and add to the juice mixture. Whisk in the mustard and La Tourangelle Amazonian Nutriblend™. Season to taste.
