- 2-2 1/2 lbs. red potatoes , washed
- 4 Tbsp Herbs de Provence Oil
- Salt and pepper to taste
- Preheat oven to 450F.
- Line a cookie sheet with foil, cut potatoes into wedges and drop onto a cookie sheet.
- Coat potatoes in Herbs de Provence Oil, season with salt and pepper.
- Roast for 25 minutes, turning once.
- Serve with a generous drizzle of more infused oil and enjoy!
