Fresh Summer Fruit Salad with Extra Virgin Olive Oil Dressing

The summer season is the perfect time to try making one of the easiest – and most delicious recipes: a refreshing fruit salad. With healthy ingredients and a dash of La Tourangelle’s Smooth & Fruity Extra Virgin Olive Oil, this salad pops with bright colors and flavors.

Ingredients 

Dressing 

  • 3 tablespoons (45 ml) La Tourangelle Smooth & Fruity Extra Virgin Olive Oil
  • 2 tablespoons (30 ml) freshly squeezed orange juice
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • Zest from 1 lemon
  • ½ teaspoon (2.8 g) honey 

Salad 

  • 1 cup (123 g) raspberries
  • 1 cup (166 g) sliced strawberries
  • 1 cup (140 g) blueberries
  • 1 cup (152 g) chopped watermelon
  • ½ cup (70 g) sliced green or red seedless grapes
  • 1 medium-sized nectarine, chopped into ½-inch cubes
  • ½ a ripe mango, peeled and chopped into ½-inch cubes
  • 10-12 (10 g) shredded fresh mint leaves, for garnish 

Directions 

Make the salad dressing 

  1. In a small bowl, whisk the orange juice, lemon juice, honey, and lemon zest until well combined.
  2. Whisk in the extra-virgin olive oil 1 tablespoon (15 ml) at a time, until the dressing is smooth and emulsified.
  3. Set aside. 

Assemble the Salad 

  1. Assemble your ingredients: thoroughly wash the fruits and berries.
  2. Chop the watermelon, mango, and nectarine, then slice the strawberries and seedless grapes.
  3. In a medium bowl, combine the chopped nectarines, mango, sliced strawberries, blueberries, and seedless grapes.
  4. Mix in the watermelon and top with raspberries. Drizzle with the extra virgin olive oil dressing and add the shredded fresh mint leaves for garnish.
  5. Refrigerate for one hour or serve fresh.
