Winter, Spring, Summer and Fall… Salads are always a good idea. Even better? A salad that counts as a whole meal. We love adding shredded chicken into our salads to make them more substantial. This Shredded Chicken Salad with Honey Citrus Vinaigrette is too good not to share!

Ingredients
- 1/4 cup fresh squeezed orange juice
- 2 tbsp La Tourangelle Avocado Oil
- 1 tbsp honey
- 1/2 tsp stone ground mustard
- plus salt and pepper to taste
- Greens of choice
- A couple oranges (segmented)
- 4 small pre-cooked beets
- A pound or more chicken (cooked and shredded)
- Goat cheese crumbles

Directions
- Start off by combining all of your vinaigrette ingredients into a small bowl and whisk until well-combined. Alternatively, you can place all ingredients into a small jar, cover and shake vigorously (love this quick and easy method!)
- Next, layer your salad ingredients as desired.
- Then, dress salad with vinaigrette and serve immediately.
