Ingredients
- 2 flax eggs
- 3 tbsp melted butter/butter alternative
- 3/4 cup Ripple Vanilla Milk or other milk of choice
- 3/4 cup pumpkin puree
- 1 tsp vanilla extract
- 1/4 cup plain apple sauce
- 2 tbsp La Tourangelle Toasted Pumpkin Seed Oil, plus more for topping
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 cup all purpose flour (sifted)
- 1 cup whole wheat flour (sifted)
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp pumpkin pie spice blend
- 1 and 1/2 tsp ceylon cinnamon
- 1/2 tsp kosher salt
- 1/4 cup white sugar and 1 tbsp ceylon cinnamon
For topping:
Directions
- Preheat oven to 325 degrees.
- Lightly grease a couple of donut pans (recipe makes 12 full size donuts) with non-stick spray. Set aside.
In a large mixing bowl combine eggs, butter, milk, pumpkin, vanilla, applesauce, La Tourangelle Toasted Pumpkin Seed Oil and both sugars. Mix until well-combined.
- Then, in a separate bowl combine both flours, baking powder, baking soda, pumpkin pie spice blend, ceylon cinnamon and salt. Again, whisk until well-combined.
- Next, start to add the flour mixture to your dry ingredients, mixing gently as you go.
- Continue adding and mixing until just combined.
- Spoon batter into donut wells, filling approximately 3/4 full.
- Bake for 10 minutes (give or take a few minutes depending on oven).
- Remove from oven and allow to cool at least 5 minutes in donut pan. Then transfer to a wire rack.
- While donuts cool, make cinnamon sugar topping by combining sugar and cinnamon in a small bowl.
- Lightly brush the tops of donuts with La Tourangelle Toasted Pumpkin Seed Oil, then dip tops in sugar mixture. Return to wire rack and enjoy!
