Looking for a satisfying meal for your little goblins on Halloween? Try this tempting roasted red pepper soup with spooky witch fingers made from homemade pizza dough, seeds and almonds. Perfect for dipping, these bread sticks make an ideal side for a hearty bowl of vegetable soup.
Ingredients
- 12 Sweet Red Peppers
- 3 Tbsp of Extra Virgin Olive Oil
- 1 liter of chicken stock
- 4 cloves of garlic
- Salt and pepper to taste
- 1 ball pizza dough
- 1 large egg

1 tbsp water
- Sesame seeds and/or poppy seeds, optional
- 12 whole raw almonds

For the Roasted Red Pepper Soup
Wash and remove seeds from the peppers.
- Place pieces in a single layer on a baking sheet lined with parchment paper. Drizzle with Extra Virgin Olive Oil.
- Roast in preheated oven at 300 degrees for 1 hour or until skins are thin, but not charred.
Let peppers cool and then peel skins off.
- In a medium pot, sauté 4 minced garlic cloves in 1 Tbsp of Extra Virgin Olive Oil.
- Add peppers and chicken stock. Use an immersion blender to purée ingredients.
- Simmer for 30 minutes, spoon into bowls and drizzle with more Extra Virgin Olive Oil for serving.
For the Witch Fingers
- Preheat the oven to 450 degrees. Line a baking sheet with parchment paper and set aside.
- Place the pizza dough on a lightly floured work surface. Using lightly floured hands, divide the dough into 12 equal pieces (about 1.5 ounces each). Shape each piece into a rope about 7 to 9 inches long. Twist each rope so that there is a knot in the middle, which will become the knuckle.
Place the bread sticks on the prepared baking sheet about 1 to 2 inches apart. Let rest for about 20 minutes.
- In a small bowl, beat together the egg and water. Brush each “finger” lightly with the mixture. Sprinkle with the sesame seeds and/or poppy seeds, if desired. Press one almond into the end of each “finger” – be sure to press down hard or they will come off during baking.
- Bake for 15 to 20 minutes, or until golden brown.
