Roasted Walnut Oil Vinaigrette

Ingredients
1/4 cup red wine vinegar
2 tablespoons minced shallots
2 tablespoons walnut oil
2 tablespoons honey
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions Combine all ingredients, stirring with a whisk. Store in refrigerator for up to 1 week.
