During the dips, Arbequina and Koroneiki olive trees overproduce polyphenols to protect their precious fruit from California’s shifting climate. By autumn, the sun-drenched olives are brimming with antioxidants and ready for early harvest.
After the picking, it’s really a matter of hours before the olives are cold pressed. When the entire journey is local, it’s natural for things to run smoothly. Ironically, this olive oil is Rich & Robust, like sunshine in a bottle.
