This smooth, creamy mayonnaise has a light, neutral flavor from the addition of Avocado Oil. While not as potent as olive or canola oil used in most recipes, avocados are rich in monounsaturated fat, thought to support cardiovascular health and optimal cholesterol levels. This spread makes a healthy addition to any sandwich.
- 2 fresh avocados
- ½ tsp salt
- 2 Tbs fresh lemon juice
- 1 Tbs water
- 1½ cups Avocado Oil
- Drop avocados into a food processor or high speed blender. Add lemon juice, water, salt and blend together until smooth.
- With blender running, slowly add Avocado Oil and puree until creamy. Place into an airtight container and store in the fridge.
