It is always a brain teaser to prepare a lunchbox. Using tasty oil like Avocado, Hazelnut or Pistachio, makes it easy to prepare simple dishes with flavors that kids like. This shrimp couscous, tomato salad and pear/goat cheese lunchbox is yummy, healthy and easy to prepare.
Ingredients
- 15 shrimp, cooked
- 1 zucchini, chopped

2 Tbs La Tourangelle 100% Organic Extra Virgin Olive Oil
- 1/2 cup couscous
- Salt to taste
- 7 cherry tomatoes, sliced in half

La Tourangelle Avocado Spray Oil
- Salt to taste
- 1 pear, sliced
- Goat cheese, sliced
Directions
- The night before, stir the zucchini and the shrimps with the olive oil. Prepare on the side the couscous. Store in the refrigerator overnight. In the morning, mix the ingredients together.
- Slice cherry tomatoes in half. Spray with Avocado Oil and add salt to taste.
- Mix pear and goat cheese, drizzle some Avocado Oil.
