Avocado oil is processed on equipment very similar to those used to process extra virgin olive oil. The avocado pulp is first expeller-pressed usually using a centrifuge. It is then lightly filtered and “polished” using another centrifuge. It takes from 15–20 avocados to make 1 ( one) 250 ml/8 ounce tin.
Avocado oil mayonnaise: Whisk one yolk egg, 1 lemon juice, 1 tsp mustard and salt in a bowl; slowly add the avocado oil while whisking. Continue to whisk without stopping until the mayonnaise has thickened.
Easy Salad Dressing: 4 tbsp. of La Tourangelle avocado oil, 4 tbsp. orange juice, 1 tbsp. honey. Whisk together orange juice and honey, salt & pepper. Slowly add La Tourangelle Avocado oil, whisk until emulsified, or shake the ingredients in a jar.
Lemon Garlic Avocado Oil Vinaigrette: 1 clove garlic, juice from ½ lemon (approx. 1 ½ T),1 tsp. grated cheese (such as romano or parmigiano), 1/8 t salt, 1/8 t pepper, 1 ½ tbsp. avocado oil. Use a garlic press to press the garlic. Add lemon, grated cheese, salt and pepper. Whisk together and slowly pour in avocado oil while whisking. Add lettuce or other greens and toss to coat. Then add in additional salad ingredients.
Sautéed Seasonal Greens with Avocado Oil: 1 pound trimmed and washed seasonal greens (chard, kale…), 2 tbsp. of La Tourangelle Avocado oil, 2 garlic cloves, 2 pinched dried red pepper flakes, salt. Warm oil in a deep pan with garlic and red pepper flakes (medium-heat). Once the garlic begins to color, add the greens. Turn them regularly, salt, then cover. Steam the greens for 10-15 minutes or until tender.
Easy Fabulous Veggies: drizzle La Tourangelle Roasted Avocado Oil on any fresh vegetables especially: leafy greens (like lettuce, collards, kale…), tomatoes, carrots, potatoes.

While delicious for cooking, avocado oil, like olive oil and hazelnut oil, contains oleic acid, a monounsaturated fat that may help to lower cholesterol. In one study of people with moderately high cholesterol levels, individuals who ate a diet high in avocados showed clear health improvements.
